Ingredients
  

  • 1 kg bone-in chicken (or leftover bones)
  • 2 tbsps olive oil
  • 1 large onion (chopped)
  • 4 garlic cloves (crushed)
  • 2 carrots (chopped)
  • 2 celery sticks (chopped)
  • 1 tsp black pepper
  • 1 tsp salt (adjust to taste)
  • 1 bay leaf
  • 1 tsp mixed herbs
  • 1 tsp apple cider vinegar (optional, helps extract nutrients)
  • 1 inch ginger
  • ½ tsp turmeric

Method
 

  1. Prepare Ingredients

    Wash the chicken bones thoroughly and chop all vegetables into medium-sized pieces.
  2. Sauté the Base

    Heat olive oil in a large pot over medium heat. Add chopped onions and sauté until golden brown.
  3. Add Aromatics

    Add garlic, carrots, and celery. Cook for 2–3 minutes until slightly softened and fragrant.
  4. Add Bones

    Add the bone-in chicken pieces or leftover bones. Lightly roast them for 5 minutes to enhance flavor.
  5. Add Liquid & Spices

    Pour in water and add salt, black pepper, bay leaf, herbs, and apple cider vinegar.
  6. Simmer Slowly

    Bring to a boil, then reduce heat to low. Let it simmer for 45–60 minutes for deep flavor extraction.
  7. Strain or Serve

    Strain the broth for a clear soup or serve as a chunky stew with vegetables and meat.
  8. Taste & Adjust

    Adjust salt and spices as needed. Serve hot.
