Ingredients
  

  • 1 large flour tortilla
  • ¾ cup shredded Monterey Jack cheese (Chipotle’s cheese)
  • ½ cup cooked chicken, steak, or barbacoa
  • 1 tbsp chipotle sauce (optional)
  • 1 tbsp butter or oil for cooking
  • Sides: sour cream, salsa, guacamole

Method
 

  1. Heat a skillet over medium heat and lightly brush with butter or oil.
  2. Place the tortilla on the skillet and sprinkle Monterey Jack cheese over half of the tortilla.
  3. Add your chosen protein (chicken, steak, barbacoa, or veggies).
  4. Fold the tortilla in half to form a quesadilla.
  5. Press gently with a spatula and cook 2–3 minutes per side until the cheese melts and tortilla becomes golden.
  6. Slice into triangles and serve with sour cream, salsa, guacamole, or Chipotle quesadilla sauce.
