Preheat the Oven

Cut the potatoes into even 1-inch cubes or wedges. Keeping them uniform ensures even cooking and browning. Season the Potatoes
Place the potatoes in a large bowl. Add olive oil, salt, pepper, garlic powder, paprika, and dried herbs. Toss until all potatoes are evenly coated. Arrange on Baking Sheet
Spread the potatoes in a single layer on a baking sheet. Do not overcrowd — this helps them roast instead of steam. Roast Until Golden
Roast for 30–35 minutes, flipping the potatoes halfway through. They should be golden brown, crispy on the outside, and tender inside. Finish with Butter (Optional)
Remove from the oven and immediately toss with butter for extra richness and flavor. Add Toppings & Serve
Top with cheese, sour cream, herbs, or bacon if desired. Serve hot.
